When I set those new faces, it appears in the upper part the word "OK Google" during a few seconds and then it disappears.
Is it possible to remove it completely?

I've never seen any of that on mine. Check your settings to make sure you have the watch set correctly. Don't know what else to say.

Is it possible to remove it completely?

All you have to do is say "Ok google". This will clear the text. If it reappears, simply say "Ok google" again.

Silly question as I haven't used the watch maker app before, is there 1 place in particular the Tag faces are located or do you need to scroll through page after page to find them scattered?

To get watch faces, you need to have your watch paired with an Android Phone or Tablet.

You'll need the WatchMaker App. I use WatchMaker Premium, but they also make a free version.

Then you'll need to join the Google+ WatchMaker communities to find fan-made creations.

Once your part of the Communities, from your Android Phone or Tablet, search for TAG HEUER, HEUER, or any brand of your choice. I don't keep any links.

Once you find suitable watch faces, use the DROPBOX links to download them into the WatchMaker app on your Android phone or tablet.

Using the WatchMaker app, you can select them on your phone, to have them install on your watch.

Just remember that if you switch back to the official TAG Heuer dials, your watch needs to be set to run the WatchMaker app to be able to see the custom faces.

Unfortunately if you have an iPhone, I don't believe these instructions will currently work. However there is hope, as it is rumored that as part of the next major AndroidWear release later this year, the watch will be able to have stand-alone apps.
