Random thought of the day, can you convert a dial with a date to a non date dial?

I like the older style Aquaracers WAN2120s yet not keen on the 3 o clock date, can the date be covered if a replacement dial found and spun/ cut to fit?

Absolutely, as long as you can find a dial. Some microbrands do their non-date variants this way - the crown has a date set position, and the mechanism exists, but there's no visible date to set.
